Curry Black Bean Sweet Potato Burger

Enjoy a tasty bean burger that does not fall apart and shapes into a patty well.

Equipment

  • 1 Large Bowl
  • 1 Large Spoon

Ingredients

  • 15 oz Black beans (no salt or low salt preferred)
  • .5 cup Onion (small), chopped
  • .5 cup Quick Oats (or regular, "Old Fashioned") plus more, as needed

    You can leave regular oats as-is or grind them in a blender to make Quick Oats.

  • 1/2 tsp Turmeric
  • 2 TBSP Flax seed meal
  • 2 TBSP Tomato paste
  • 1 TBSP Water
  • 1 TBSP Granulated garlic
  • 1/2 tsp Cinnamon
  • 1 tsp Ground cumin
  • 1 tsp Onion powder
  • 1 tsp Garam masala
  • 1/2 – 1 cup Chopped Greens (cooked with the liquid squeezed out) Optional

Instructions

  • In a large bowl combine all ingredients (be sure to squeeze liquid out of the greens, if used).
  • Mix and squish all ingredients. The mixture should be moist but not wet. Add oats if too wet, add tomato paste if too dry.
  • Shape into patties. Bake in oven (350 degrees for 12 minutes) or cook in pan.

Notes

Tips: Too crumbly? Add more liquid. Too watery? Add more starch.
