Pineapple Slaw

Ingredients

  • 1 cup Pineapple, fresh (chopped into small pieces) (or one 8 oz can pineapple "tidbits," undrained
  • 3 Tablespoons Pineapple juice, no sugar added only needed if you're using fresh pineapple instead of canned.
  • 3 cups Cabbage, shredded you can buy bagged or shred your own
  • 1 1/2 cups Gala apple, chopped (unpeeled) Use any sweet/crisp apple
  • 1/4 cup Raisins (golden or regular) Organic preferred. No oil.
  • 1/4 cup Cashew Cream #1

Instructions

  • If using canned pineapple, drain & reserve 3 Tablespoons of juice.
  • Combine pineapple, cabbage, apple, and raisins in a large bowl.
  • Combine the 3 Tablespoons of pineapple juice and the cashew cream. Add to cabbage mixture, blending gently.
  • Cover and chill.
  • When ready, spoon onto plate. You can put some lettuce on the plate, put the slaw on top and then garnish with some apple wedges.

Notes

Often, raisins have oil. You CAN find raisins without it, though. Whole Foods brand of organic raisins are just raisins.
